Spaghetti Squash Balanzness

I hung out with Brett and Heather last night, they are some slender youths. I am so impressed with their will power and determination, Im jealous...big time! Ok enough D S-ing. Heather made this awesome vegetarian spaghetti squash dish. I cant remember the meat substitute so I wont try to write the recipe. It was just as good, or even better then an italian dish you buy at any local pizzeria.

Ingredients:
-2 spagett squash
-8oz part skim mozzarella grated
-14.5oz can fire roasted tomatoes
1 bag morningstar farms grillers crumbles
-1 Tbsp olive oil
-various dried italian seasonings

1.) Preheat oven 475
2.) Cut large X onto front and back sides of spaghetti squash. Microwave on high for 10 mins or until soft. Try flipping it halfway through.
3.) Heat morningstar crumbles in pan, add about 1 tsp various italian seasonings. Heat just until slightly browned and set aside.
4.) Puree together 1 can tomatoes, olive oil, 1 tsp various italian seasonings. I don't measure and its different all the time.
5.) Scrape out seeds from squash and discard (wear an apron or messy clothes). Scrape out spagett.

Layer in pam sprayed casserole dish:
-Squash (should be about 4 cups)
-4oz cheese
-morningstar crumbles.
-tomato sauce
-4oz cheese

Bake about 20-25 mins. Try not to burn your mouth. Makes 4 servings.
